In this post, I’m sharing with you my absolute favorite recipe for some super simple sugar cookies perfect for spring. This is the best recipe for springtime baking or for a fun Easter treat.
Super Simple Sugar Cookies with a Secret Ingredient
One thing I love to bake in the springtime, is sugar cookies. They are so simple and easy, and you can decorate them any way you want. I’m sharing with you, a recipe that I have used since I was in grade school. It’s a family favorite, and there is a certain key ingredient that makes it taste absolutely perfect… lemon. It sounds crazy, but they taste amazing with a small hint of lemon, creating the best super simple sugar cookies perfect for spring. You’ll thank me later!

What You Will Need
- 3 cups all purpose flour
- 1-2 drops Young Living Vitality Lemon Essential Oil or 1/4 tsp. lemon extract
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. vanilla extract
- 1 cup sugar, granulated
- 1 egg
- 1 cup butter, unsalted
- stand mixer or hand mixer
- measuring cups
- measuring spoons
- large bowl
How to Make Super Simple Sugar Cookies
Now lets get started on baking these delicous sugar cookies! First, you want to soften your butter before starting anything else. No one likes cold, hard butter that leaves chunks in your dough. I like to toss mine in the microwave for a few seconds, or you can set it out on the counter for an hour before baking.
Next, in the bowl of an electric mixer combine softened butter and sugar, mixing well until smooth. Then add in the egg, vanilla extract, and lemon, mixing until well incorporated. In a separate bowl, combine all of the last few dry ingredients. Then slowly add the dry ingredients to the wet ingredients in the bowl of the electric mixer, mixing until well combined.
Lastly, I like to chill my dough for an hour in order to easily cut out my cookies. Then once your dough has chilled, you can roll out your dough onto a floured surface and begin cutting out your cookies in whatever fun springtime shape you want. I used a vintage Easter bunny cookie cutter I thought would be cute for spring. Here is one similar I found on Amazon.
Finally, once you’ve cut out all your cookies and placed them on cookie sheets, you’ll want to bake them for 8-10min at 350 degrees.
Also, I like to add a simple icing sugar glaze to mine, to create a more put together sugar cookie. I honestly eyeball the recipe with just two ingredients: Icing sugar and milk. The thicker the consistency the better, you don’t want your glaze to run off the cookie.

Super simple sugar cookies perfect for Springtime!
Ingredients
- 3 cups all purpose flour
- 1 cup white sugar
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1/4 tsp. lemon extract
- 1 tsp. vanilla extract
- 1 cup butter, softened
- 1 egg
Instructions
1. Combine softened butter and sugar into bowl of an electric mixer, and mix until smooth.
2. Then add in extracts and egg, mix thouroughly.
3. Combine all other dry ingredients into a bowl and stir, then slowly add dry ingredients to wet ingredients in bowl of electric mixer.
4. Once dough has been formed and mixed well, cover and chill dough for an hour.
5. After dough has been chilled, roll out onto floured surface and cut out cookies with springtime cookie cutters.
6. Bake at 350 degrees for 8-10 minutes.
7. Once cooled, you can create an icing sugar glaze listed in post, and ice your cookies.
