This creamy tomato bean soup is so easy and quick to pull together on a busy cold night. It’s also a great soup to make and freeze for later. I will definitely be making this soup to add to the freezer for my upcoming postpartum season with baby #5.

Impressively, it is one of those soups that you dump a bunch of ingredients in and let it simmer. In busy seasons of life where you crave a good comfort meal but don’t have a lot of time, these types of recipes are must haves in your collection.

Tips For Making Creamy Tomato Bean Soup

  • Drain off the grease from your sausage. It makes for a prettier soup when you do.
  • The more Parmesan cheese and heavy cream the better, in my opinion. Or the creamier the better.
  • Serve with crusty, toasted homemade bread. Use my favorite recipe here.
  • Adding more beans to it, is definitely not frowned upon. The more the better.

Ingredients You Will Need

Here are all the ingredients you will need to make this creamy tomato bean soup:

  • 1lb Italian Sausage
  • Olive Oil
  • 2 garlic Cloves
  • 1 Medium Yellow Onion
  • 3 cups Chicken Broth
  • 1/2 cup Pureed Tomatoes
  • 3 ounces Tomato Paste
  • 4-5 cans Cannellini Beans (drained and rinsed)
  • 1 1/2 cups Heavy Cream +/-
  • 2 ounces grated Parmesan
  • chopped parsley for garnish (optional)
  • Red Pesto for serving on top (optional)
  • 1 tsp. Salt
  • 1 tsp. Black Pepper
  • 1 tsp. Dried Thyme
  • 1 tsp. Dried Oregano
  • 1/2 tsp. Fennel Seeds
  • 1/2 tsp. Red Pepper Flakes

  • Dutch Oven or Large Soup Pot
  • Ladle for Serving

  • Sharp Kitchen Knife
  • Measuring Cups

How to Make Creamy Tomato Bean Soup

How to make Creamy Tomato Sausage Bean Soup

Step 1: Cook Your Sausage

Begin by adding a splash of olive oil to your pot, then your sausage. While that is cooking, chop the onion and mince the garlic. Once the sausage is cooked thoroughly, add in the onion and garlic cooking until fragrant. Stir in spices and cook for another minute.

Step 2: Add Broth and Canned Goods

Now add in the chicken broth, pureed tomatoes, and tomato paste, stirring well. Bring to a boil, then add the drained and rinsed beans. Stir until everything is well combined. Cover and simmer for 15 minutes, stirring occasionally.

Step 3: Pour in Cream and Cheese

Lastly, we are adding in the heavy cream and grated Parmesan cheese. Add more or less, whatever your prefer. The more the better in my opinion. Stir well until cheese is melted and cream is mixed in. Salt and Pepper to taste. Garnish with chopped Parsley and Red Pesto. Serve with toasted homemade bread and butter.
