Begin by following the directions on the box of the cake mix. Once you've added all of those ingredients, add in 1 can of pumpkin puree and 1 tablespoon of pumpkin pie spice. Blend well with your mixer.
Next, line your muffin tin with liners and scoop 1/4 cup batter into each one.
Bake according to your cake mix instructions for cupcakes, or until a toothpick comes out clean.
While your cupcakes are baking, begin whipping up your cream cheese frosting.
To a clean mixing bowl, add 8oz softened cream cheese, 1/2 cup softened butter, and cream together.
Then, slowly add in 16oz powdered sugar, mixing well.
Lastly, add in 1 teaspoon of vanilla extract and combine.
Once your cupcakes are cooled, you can frost them and garnish them with whatever you like. I typically garnish mine with a Brachs Pumpkin Candy but this time I raided my pantry and sprinkled some turbinado sugar and cinnamon on each of them. I love how simple and chic they turned out!
