In this post, I am sharing our family favorite recipe for how to make breakfast cookies for kids. With busy mornings and hungry little bellies, these nutritious breakfast cookies are the perfect grab and go snack for all parents around.

Why We Love These Breakfast Cookies
I have been making this exact recipe since I was a young girl of 12 years old. The credit for the original idea of these as breakfast cookies goes to my mom. These were the only cookies she would gladly let us have for a quick breakfast snack if we had a busy or slow morning. They are full of healthy fats, raw organic sucanat sugar, dried coconut, oats, whole wheat flour, and honestly anything you want to add to them. It is a very versatile recipe.
What You Will Need
- large mixing bowl
- whisk, spatula, or dough whisk
- measuring cups
- measuring spoons
- 3 cups organic sucanat (we get ours from Azure Standard)
- 1 cup organic coconut oil (room temp)
- 1/4 cup softened butter
- 4 eggs
- 2 tsp. vanilla
- 2 1/2 cups organic whole wheat flour
- 2 tsp. sea salt
- 2 tsp. baking soda
- 3 cups organic rolled oats
- 2 cups dried coconut flakes (we get ours from Azure Standard)
- 2 cups raisins/nuts/chocolate chips/butterscotch chips (we always do 1 cup chocolate chips and 1 cup butterscotch chips)
How to Make Breakfast Cookies for Kids

Mix sucanat, oil, and butter well in a large bowl until smooth. Beat in eggs and vanilla. Combine flour, salt, soda in a separate bowl, then mix into first mixture. Add all remaining ingredients. Drop by spoonfuls onto parchment lined/greased cookie sheet about two inches apart. Bake at 350℉ for 10-12 minutes.
